Recipe:
Mum's carrot & pork rib soup

Ingredients: 

  • 4 x carrots

  • 2 x large potatoes

  • 500g pork ribs

  • 1 x large onion

  • 1 clove of garlic

  • 1 stalk of leek (not in my mum's recipe, but Peter snucked that in)

My mum used to cook this quite often when I was in Singapore. It's really easy to make. She would cook a huge pot of it, and the leftovers would taste especially good on the next day.

Typically we eat this with some other stir fry dishes and rice. And it is all served at the same time, not before the 'main course' or after.

  1. Cut up carrots, potatoes and leek in chunks of approximately 1 inch thick
  2. Cut up the pork ribs to make them fit easier into the pot
  3. Quarter the onions into large chunks, peel the garlic, and no need to cut the garlic
  4. Put everything in pot or slow cooker, and add water till it covers everything
  5. Boil on stove or slow cooker for as long as you can. Probably 1 hour at least?
  6. Add salt and ground pepper to taste
  7. Serve with rice

Serves 2-4, depending on hunger
